I remember when I was young and my eating habits were completely different from what they are now. We only ate meat on Saturdays and Sundays, and if there was any leftover meat from the weekend, we also ate it on Mondays. On other days, I ate meals made from legumes, vegetables, and wheat flour. When we got home from school we found potatoes, beans and lentil soup waiting for us. This can be “white” with cream, or “red” – beans or fake goulash with the addition of vegetables.

As a second course we often had roksya stuffed with poppy seeds, nuts or cottage cheese. My mom prepared at least a hundred pieces since we were four kids and anything less was never enough. Other popular dishes include home-made thick noodles with various crumbs or eggs. We had sauerkraut, home-made pickles, or vegetable salad with this. Sometimes, dolki or fritters were grilled and served with various fillings. Back then, all these dishes took a lot of work, but the mothers made them with love and without complaint.
